A slow-cook dream. Beef shin is one of the most hardworking parts of the beef animal, so it needs long cooking at a low heat to relax the muscle and melt all the gelatinous bits. It's well worth the wait and will result in a dish that melts in the mouth.

Fresh beef available for collection from Thursday 27th March to Sunday 30th March.

From 1st April the beef will be frozen and will be available until Sunday 13th April.
